This is my favorite go to gluten free cookie recipes.
In fact, I typically eat a dozen a day!
There are several varieties to this cookie to include:
egg, butter, milk chocolate, or white chocolate.
I will post those recipes separately on a later date.
For now, here is the vegan / dairy free version.
For the chocolate chips, there are several brands that offer dairy free options.
1 cup gluten free Flour – any brand should work fine
1/3 cup almond meal
1/3 cup coconut sugar
1/2 teaspoon baking powder
1/4 cup dairy free chocolate chips
1/3 cup almond milk
1 tablespoon extra virgin olive oil
Mix the dry and wet ingredients separately
Add the wet to the dry and mix together until combined
Start mixing by using a spoon and finish with your hands
Roll into 1 inch balls and place on a greased sheet
Baked in a pre-heated oven on 350 for 11 minutes
Let cool for 2-3 minutes then transfer to a cooling rack
They taste best eaten while still warm
Store in an air tight container, good for 1 week.
